    This cucumber and feta salad is a fresh, Mediterranean-inspired side dish made with crisp cucumbers, creamy feta, and lots of fragrant herbs. Tossed with our simple white wine vinaigrette dressing, it's light, bright, and perfect for spring and summer meals.


    Ingredients

    1 large English cucumber (about 350 - 400 g / 12 - 14 oz), cut into quarters lengthwise and sliced into 1.5 cm (½ inch) chunks (or 2 small Persian cucumbers)

    ½ small red onion, thinly sliced

    2 tablespoon fresh flat-leaf parsley, roughly chopped

    2 tablespoon fresh mint leaves, roughly chopped

    1 tablespoon fresh dill, chopped

    100 g (3 ½ oz) feta, broken into pieces

    Freshly ground black pepper, for seasoning

    3 - 4 tablespoon White Wine Vinaigrette


    Instructions

    1. Prepare the vegetables

    Place the chopped cucumber and sliced red onion in a large mixing bowl.

    If you prefer a slightly milder onion flavor, let the sliced onion sit in a splash of vinegar for 5-10 minutes before adding.
