This is one of the simplest-and most surprisingly addictive-green salads we make. Grant and I often serve it with dinner, and we are always amazed by how much flavor comes from such a short list of ingredients.
The tender leaves, fragrant herbs, shallots, and tangy vinaigrette make it fresh enough for an easy side for weeknight dinner but elegant enough for a dinner party.

This simple French green salad uses just four main ingredients.

- Mixed salad greens - Use tender leaves such as baby butter lettuce, frisée, cos or romaine lettuce, or a mixed baby-leaf blend.
- Fresh herbs - A combination of chives, parsley, tarragon, and chervil gives the salad its classic French flavor. Use whichever herbs you can find.
- Shallots - Finely chopped shallots add a mild onion flavor without overpowering the delicate greens.
- French vinaigrette - Our homemade French vinaigrette adds acidity, seasoning, and plenty of flavor. Add it gradually so the leaves are lightly coated rather than weighed down.

What Are Fines Herbes?
Fines herbes is a classic French herb blend traditionally made with delicate herbs such as parsley, chives, tarragon, and chervil.
Unlike hardier herbs such as rosemary or thyme, fines herbes are usually added fresh so their light, fragrant flavor is not lost during cooking.
For this salad, use any combination you can find. Parsley and chives make an easy base, while tarragon and chervil give the salad a more distinctly French flavor.
Seasonality: When Are Salad Leaves in Season?
Tender salad leaves and fresh herbs are usually at their best in spring and early summer.
This is a lovely time to make bistro salad because lettuces such as butter lettuce, frisée, romaine, and baby leaves are crisp and fresh, while herbs like chives, parsley, tarragon, and chervil add plenty of flavor.
You can still make this salad year-round using whichever fresh greens and herbs are available.

How to Make Bistro Salad
Prepare the salad base

Wash the salad leaves and dry them thoroughly before adding them to a large bowl with the fresh herbs and finely chopped shallots.
Chef's Tip: Use a salad spinner to dry the leaves well. Water left on the lettuce will dilute the vinaigrette and prevent it from coating the salad properly.
Lightly dress the salad

Drizzle over a couple of tablespoons of the French vinaigrette and gently toss until the leaves are lightly coated.
Taste and add more dressing as needed.
Chef's Tip: The leaves should glisten with vinaigrette, not be weighed down by it. My head chef used to say, dressed not drenched. 🙂 Start with less dressing-you can always add more.
