    Fill two clean 13oz jam jars or tall glasses with fresh ice. Strain the cocktail mixture and divide evenly between the glasses.

    • 2-3 tablespoons sugar syrup (optional, to taste)
    • Ice cubes, for shaking and serving
    • About 3 cups (720 ml) tonic water, or enough to top up the pitcher

    Ingredients

    60 ml (2 oz) gin

    30 ml (1 oz) freshly squeezed lemon juice

    2 tablespoon strawberry jam

    2 teaspoon sugar syrup (optional, for extra sweetness)

    Ice cubes

    120 - 180 ml (4 - 6 oz) Tonic water, to top

    Garnish:

    Fresh strawberries

    Fresh thyme or mint sprigs


    Instructions

    Shake the cocktail
    Add the gin, lemon juice, strawberry jam, and sugar syrup (if using) into a jam jar with a few ice cubes. Seal tightly and shake well for 20-30 seconds until chilled and combined.
