Make the marinade

Add the chicken thighs to the bowl and toss well so everything is nicely coated in the marinade. Cover and leave to marinate for 30 minutes at room temperature, or in the fridge for a few hours or overnight.

Prepare the potatoes

Place the potato wedges into a large deep casserole dish (about 20 x 30 cm / 9 x 13 inch).
Build the base
Remove the chicken from the marinade and set aside on a plate.
Pour the chicken stock into the remaining marinade and mix well. Pour this mixture over the potatoes and toss to coat evenly. Season the potatoes well with salt and freshly ground black pepper.

Add the chicken

Arrange the chicken thighs on top of the potatoes, skin-side up. Season the chicken lightly with salt and pepper.
Roast

Bake for 50-60 minutes, or until the chicken is golden and cooked through and the potatoes are tender. Most of the liquid should be absorbed by the potatoes.
Chef's Tip: Cooking time may vary depending on the size of your chicken thighs and potato wedges, so start checking around the 40-minute mark. For extra crispy skin, switch to grill/broil for the last 2-3 minutes.
The chicken should reach an internal temperature of 74°C (165°F) at the thickest part, away from the bone. If the chicken is cooked before the potatoes are tender, simply transfer it to a plate and continue roasting the potatoes for another 15-20 minutes. Return the chicken to the casserole for the last 5 minutes so everything is hot and ready to serve.
Serve and enjoy
Remove from the oven and let everything rest for 5 minutes. Scatter over chopped parsley and finish with olives and feta if using.
