    This pesto caprese sandwich is made with soft Italian bread, ripe tomatoes, fresh mozzarella, basil pesto, fresh basil, olive oil, and a drizzle of balsamic glaze. It is fresh, creamy, full of summer flavor, and ready in just 10 minutes.

    Easy Caprese Sandwich with Pesto

    There is nothing better than ripe summer tomatoes and fresh bread, in my humble opinion. Add creamy mozzarella and a generous spoonful of homemade basil pesto, and I could happily eat this sandwich all summer long.

    This easy pesto caprese sandwich is perfect for lunch, picnics, or a light dinner when it is too hot to cook. We used our homemade focaccia, but ciabatta, panini bread, sourdough, or a crusty baguette would all be delicious.

    In this Italian-inspired version, we add basil pesto and serve everything on focaccia or your favorite Italian bread. A drizzle of olive oil and optional balsamic glaze finishes the sandwich with extra flavor.

    This pesto caprese sandwich is made with a few simple ingredients, so use the best-quality tomatoes, mozzarella, bread, and olive oil you can find.

    • Italian bread - We used homemade focaccia. Ciabatta, panini bread, sourdough, or baguette will also work.

    Ingredients

    4 slices (or portions) Italian bread (about 400g / 14 oz total) - we used our homemade focaccia, but ciabatta or panini will be delicious too

    ¾ cup (180 ml) homemade basil pesto, or use your favorite store bought pesto

    Small handful fresh basil leaves

    1-2 ripe tomatoes, sliced

    250g (8 oz) fresh mozzarella, sliced

    Balsamic glaze, for serving (optional)

    Extra-virgin olive oil, for drizzling

    Sea salt, to taste

    Freshly ground black pepper, to taste


    Instructions

    1. Prepare your base
