    Ingredients

    Ground Spice Mix

    1 tablespoon ground allspice

    1 tablespoon ground black pepper

    1 tablespoon ground cinnamon

    1 tablespoon ground cumin

    1 ½ teaspoon ground coriander

    1 teaspoon ground cloves

    1 teaspoon ground nutmeg

    Whole Spice Version - toasted and ground

    1 tablespoon whole allspice

    1 tablespoon black peppercorns

    1 tablespoon cinnamon chips or broken stick

    1 tablespoon cumin seeds

    1 ½ teaspoon coriander seeds

    1 teaspoon whole cloves

    1 teaspoon grated nutmeg (add after grinding)


    Instructions

    Method 1: Quick Ground Spice Blend

    1. Measure and mix
      Add all the ground spices to a small bowl or spice jar.

    2. Combine well
      Stir or shake until thoroughly mixed. Store in an airtight container away from heat and light for up to 3 months.

    Method 2: Toasted Whole Spice Blend

    1. Toast the whole spices
      Place the allspice, black peppercorns, cinnamon, cumin, coriander, and cloves in a dry skillet over medium heat. Toast for 2-3 minutes, stirring often, until fragrant. Do not burn.

    2. Cool and grind
