    Greek Lemon Potatoes are the perfect combination of crispy, golden edges and soft, tender centers. Roasted in a tangy lemon-garlic sauce, they make a delicious side dish or appetizer.


    Ingredients

    • 1.5 kg (3.3lbs) Lange Starchy Potatoes (like Yukon Gold potatoes, Russet potatoes, Red Skin Potatoes or Maris Piper, Fingerling Potatoes is another great option), peeled and cut into wedges

    • 1 ½ cups Chicken Stock (or low sodium chicken broth), homemade or a good quality stock

    • ⅓ cup Extra Virgin Olive Oil

    • Zest of a Lemon, unwaxed

    • ⅓ cup Fresh Lemon Juice

    • 6 Large Garlic Cloves, peeled and finely minced

    • 1 tablespoon Dried Oregano (or 2-3 tablespoon fresh oregano finely chopped if you can find)

    • Salt and Freshly Ground Black Pepper, to taste

    • 1 tablespoon Fresh Parsley, chopped for garnish

    • Feta Cheese for garnish, optional


    Instructions

    Preheat the Oven

    Preheat the oven to 200°C (400°F).

    Wash and Prepare the Potatoes

    • Wash and dry the potatoes.
