    In a processor, crush Grahams crackers until a smooth crumb.
    • Line a 7-inch (18 cm) springform pan with non-stick baking paper.
    • Crush the graham crackers in a food processor until smooth. Mix the crumbs with melted butter until well combined.
    • Press the mixture firmly into the bottom of the pan using the back of a spoon. Refrigerate for 20-30 minutes or until firm.
    Add melted butter to the crumbs and blend again until all mixed in.
    Press the mixture firmly into the bottom of the pan.

    Make the Cheesecake Filling

    Combine the cream cheese, lemon curd and melted white chocolate in blender.
    Blend together until smooth.
    • Clean the food processor bowl.
    • Add the room temperature cream cheese, melted white chocolate, and lemon curd. Process the mixture until smooth and well combined.
    • Spread the cream cheese mixture evenly over the chilled graham cracker crust. Use an offset spatula to smooth the top for a neat finish.
    Pour the cheese cake filling into pan, and smooth top with spatula before covering it with plastic wrap and putting into the fringe to set.

    Refrigerate

    • Refrigerate the cheesecake for 2-3 hours, preferably overnight, to allow it to set completely.

    For the Base

    200g (7oz) Graham Crackers (or Digestive Biscuits)

    50g (1.5oz) Unsalted Butter, melted

    For the Cheesecake Filling

    500g (16oz) Philadelphia Cream Cheese, at room temperature - softened

    180g (6.5oz) White Chocolate, melted and cooled

    320 g (11oz) Lemon Curd (homemade or store bought)


    Instructions

    Make the Base

    • Line a 18 cm (7 inch) springform cake tin with non-stick baking paper.

    • Place Graham Crackers in a food processor and process until smooth. Mix in the melted butter.

    • Use the back of a spoon and firmly press the Graham Cracker crumbs into the base of the tin. Refrigerate for 20 – 30 minutes or until firm.

    Make the Cheesecake Filling

    • Clean the bowl of the food processor.

    • Add the room temperature cream cheese, melted chocolate and lemon curd, process until smooth.

    • Spread the cheesecake filling onto the buttery Graham Cracker crust. Use an offset spatula to smooth the top of the filling.

    Refrigerate

    • Refrigerate the cheesecake for 2-3 hours, preferably overnight to set.

    Serve and Enjoy!

    • Carefully remove the cheesecake from the cake tin. 

    • Place the cheesecake on a cake stand and decorate as desired just before serving.
