These Berry Crumble Bars are all about contrast: a buttery, slightly crisp base, a soft jammy center, and a golden crumble topping. They're made with the same dough for both the base and topping, which keeps the recipe simple, while a layer of berry jam underneath the fruit filling adds extra berry flavor and helps create that deliciously jammy texture.

If you enjoyed our Apricot Squares recipe, these are a lovely berry version to try next. They have the same cozy crumble-bar feel, but with a bright mixed berry filling that works beautifully in warmer weather.

Why You'll Love These Berry Crumble Bars

    • Easy to make - The same dough is used for the base and crumble topping.
    • Fresh or frozen berries - A great recipe for seasonal berries or frozen mixed berries.
    • Great for sharing - Perfect for dessert squares, picnics, cookouts, and lunchboxes.
    • Make-ahead friendly - Bake them a day ahead and chill until ready to serve.

    Ingredients You'll Need

These berry crumble bars are made with simple baking ingredients and a quick mixed berry filling.

For the Base and Crumble Topping

Ingredients for berry crumble bars including all-purpose flour, brown sugar, butter, vanilla paste, and salt.
    • Light brown sugar - Adds gentle caramel flavor and sweetness to the crumble.
    • Unsalted butter - Melted butter helps bring the dough together and gives the bars a rich, buttery texture.
    • All-purpose flour - Forms the base of the dough and crumble topping.
    • Salt - Balances the sweetness and enhances the buttery flavor.
    • Vanilla extract - Adds warmth and rounds out the flavor of the crumble.

    For the Berry Filling

    • Berry jam - Adds extra berry flavor and creates a soft jammy layer. Use store-bought jam or try our homemade mixed berry jam.
    • Fresh or frozen mixed berries - The main filling. A mix of berries gives the bars color, sweetness, and a slightly tart flavor.
    • Cornflour (cornstarch) - Helps thicken the berry juices as the bars bake.
    • Light brown sugar - Sweetens the fruit filling. Use 2-3 tablespoons depending on how tart your berries are.

See the recipe card for quantities.

Seasonality: When Are Berries in Season?

Berries are typically in season from late spring through summer, making these crumble bars a lovely warm-weather dessert.

During peak season, fresh berries are sweet, juicy, and full of flavor. They work beautifully in simple bakes like crumble bars, where the fruit is the main focus.

You can also make this recipe with frozen mixed berries, which makes it easy to enjoy berry crumble bars outside of berry season too. Want to learn more about when fruits are in season? Explore the USDA's Seasonal Produce Guide.

How to Make Berry Crumble Bars

     Prepare the Baking Tin

    • Preheat the oven to 180°C / 350°F. Line a 20 x 30 cm / 9 x 13 inch baking tin with parchment paper, leaving a little overhang on the sides.
    • This makes it much easier to lift the bars out once they have cooled

    Make the Crumble Dough

Melted butter, brown sugar, and vanilla paste combined in a mixing bowl to begin the crumble bar dough

    • In a large bowl, mix the brown sugar and melted butter. Add the flour, salt, and vanilla extract, then mix until a soft dough forms.
    • The dough will be used for both the base and the crumble topping.

    Divide the dough

    • Set aside about one-third of the dough in the fridge for the crumble topping.
Portion of crumble mixture reserved in a small bowl for the topping before assembling the bars.

    Form the base

    • Press the remaining dough evenly into the base of the prepared tin.
Berry crumble bar base pressed evenly into a parchment-lined baking tray and docked with a fork.

Chef's Tip: Use the back of a spoon or your hands to press it down firmly for an even layer.

    Chill and Pre-Bake the Base

Partially baked shortbread crust for berry crumble bars with a light golden color around the edges.
    • Place the tin in the freezer for 10 minutes to firm up the base. Prick it lightly with a fork, then bake for 12-15 minutes, or until lightly golden and just set.

    Prepare the berry filling

    • In a bowl, toss the mixed berries with the cornflour and sugar until evenly coated. Set aside.

Chef's Tip: If using frozen berries, don't thaw-this helps prevent the filling from becoming too watery.

    Assemble the Bars

Mixed berry jam spread evenly over the baked shortbread base before adding the berry layer.
Fresh and frozen mixed berries scattered over the jam layer to create the filling for berry crumble bars
    • Spread the berry jam evenly over the warm base. Spoon the berry mixture over the jam layer, spreading it out gently.
    • Remove the reserved dough from the fridge and crumble it evenly over the berries.

Chef's Tip: Keep the crumble topping slightly chunky for a rustic texture.

     Bake Until Golden

    • Bake for 40-45 minutes, or until the berries are soft and jammy and the crumble topping is golden brown.

Chef's Tip: Ovens can vary, so start checking the bars after about 30 minutes

     Cool and Slice

    • Let the bars cool completely in the tin. For cleaner slices, chill them in the fridge for 15-20 minutes before cutting into squares or bars.

Chef's Tip: These bars slice much more neatly once fully cooled, especially because the berry filling is soft and juicy.

    Flavor Variations, Substitutions and Add-Ins

These mixed berry crumble bars are easy to adapt depending on what you have on hand.

    • Add lemon zest - A little lemon zest adds brightness to the berry filling.
    • Add sliced almonds - Sprinkle a handful over the crumble topping before baking.
    • Use one type of berry - Make raspberry crumble bars, blueberry crumble bars, or blackberry crumble bars.

What to Serve with Berry Crumble Bars

These berry crumble bars are delicious as they are, but they're also lovely with something creamy on the side.

    • Whipped cream - Light and simple for an easy dessert.
    • Vanilla ice cream - Perfect with slightly warm crumble bars or try them with our homemade blueberry cheesecake ice cream for a fun summer dessert.
    • Coffee or tea - Serve as an afternoon treat or picnic dessert.
    • Fresh berries - Add a few fresh berries on the side for color and freshness.

    Storage Instructions

    • Freezer: These bars can be frozen for up to 2 months. Wrap them well or store them in a freezer-safe container.
    • To Serve: Thaw in the fridge overnight. Enjoy chilled, at room temperature, or gently warmed.
