My mom didn't really make polenta, but I often ate it at my aunt's house. Growing up, maize meal was much more familiar. We have coarse krummel pap, often served alongside braaied meat and tomato and onion smoor, as well as a softer breakfast version made from fine maize meal with butter and sugar.
So polenta has always felt wonderfully comforting to me - almost like the posh Italian cousin of pap, only in this recipe we make it extra creamy with whole milk, butter, and Parmesan.
