Description
Greek Lemon Potatoes are the perfect combination of crispy, golden edges and soft, tender centers. Roasted in a tangy lemon-garlic sauce, they make a delicious side dish or appetizer.
Ingredients

1.5 kg (3.3lbs) Lange Starchy Potatoes (like Yukon Gold potatoes, Russet potatoes, Red Skin Potatoes or Maris Piper, Fingerling Potatoes is another great option), peeled and cut into wedges

1 1/2 cups Chicken Stock (or low sodium chicken broth), homemade or a good quality stock

1/3 cup Extra Virgin Olive Oil

Zest of a Lemon, unwaxed

1/3 cup Fresh Lemon Juice

6 Large Garlic Cloves, peeled and finely minced

1 tbsp Dried Oregano (or 2-3 tbsp fresh oregano finely chopped if you can find)

Salt and Freshly Ground Black Pepper, to taste

1 tbsp Fresh Parsley, chopped for garnish

Feta Cheese for garnish, optional
Instructions
Preheat the Oven
Preheat the oven to 200°C (400°F).
Wash and Prepare the Potatoes

Wash and dry the potatoes.

Peel and cut potatoes into large thick wedges or in half if you are using smaller potatoes.
Make the Lemon Braising Liquid

Combine the chicken stock, olive oil, lemon zest, lemon juice, garlic and oregano in a large measuring jug or small bowl.
Coat and Season the Potatoes

Place the potato wedges in a large roasting pan in a single layer.

Pour over all the lemon braising liquid and generously season the potatoes with salt and black pepper.

Toss to coat all the potatoes evenly.
Roast the Potatoes

Roast the Greek lemon potatoes in the preheated oven for 50 - 60 minutes or until soft, tender and golden brown, turning the potatoes half way through the cooking time. (Most of the liquid should be absorbed by the potatoes)
Serve and Enjoy!
Garnish these roasted Greek potatoes with chopped parsley (and feta cheese) before serving.

How to Store Leftover Potatoes: Store cooled potatoes in an airtight container in the fridge for up to 3 days.
These Potatoes Are Not Freezer Friendly: The texture may change after freezing.
How to Reheat: Reheat in a 180°C (350°F) oven for 10-15 minutes to restore their crispy edges.
