    Marinated mozzarella balls—made with fresh mozzarella balls (also known as bocconcini)—are infused with extra virgin olive oil, garlic, lemon zest, and herbs. This easy appetizer is perfect for antipasto platters, salad toppers, or a quick Mediterranean-style snack.


    Ingredients

            *   200g (7 oz) fresh mozzarella pearls (bocconcini balls), drained

    • ¼ cup extra virgin olive oil

    • 1 small garlic clove, finely grated or minced

    • ½ teaspoon dried oregano

    • ½ teaspoon dried basil (or Italian seasoning)

    • Large pinch crushed red pepper flakes (optional)

    • Zest of ½ lemon (optional)

    • 1 tablespoon chopped fresh parsley or basil (optional)

    • Sea salt and freshly ground black pepper, to taste


    Instructions

    1. Drain and pat dry the mozzarella balls.

    2. Combine olive oil, garlic, herbs, lemon zest, and a pinch of chili flakes in a bowl or jar.

    3. Add the mozzarella balls, tossing to coat well. Season with salt and pepper. Let marinate at room temperature for 30 minutes or refrigerate for up to 3 days.
