    Description

    Ingredients

    80g dutch-process cocoa powder

    60g all-purpose flour (cake flour)

    1 teaspoon baking powder

    370g castor sugar

    Pinch of salt

    4 eggs, room temperature

    250g butter, melted and cooled

    1 teaspoon vanilla extract

    200g dark chocolate, chopped (or dark chocolate chips)


    Instructions

    1. Preheat oven to 160°C (320°F)

    2. Line a 20 x 30cm (9×13 inch) pan with parchment paper, leaving an overhang on the sides to lift the finished brownies out. Set aside.

    3. Sift cocoa, flour, and baking powder together in a large mixing bowl.

    4. Add castor sugar and salt and mix well with a spatula.

    5. Whisk together the eggs, butter and vanilla.

    6. Fold the egg mixture into the dry ingredients until just combined. 

    7. Fold in the chopped dark chocolate or chocolate chips.

    8. Spread evenly into the prepared pan. (Batter will be very thick.)

    9. Bake for 40 - 45 minutes. 

    10. Remove from the oven and place on a wire rack to cool completely in the pan before cutting.
