Watermelon Slushie with Berries

Description

This watermelon slushie is a refreshing summer drink made with frozen watermelon, mixed berries, citrus, and fresh mint. It’s frosty, fruity, naturally sweet, and perfect for hot days when you want something cold and easy to make.


Ingredients

Scale

750 g (5 cups) seedless watermelon, cut into cubes and frozen
2 tbsp (30 ml) lemon juice or lime juice

Small handful fresh mint leaves

300 g (2 cups) frozen mixed berries
1-2 tbsp (15-30 ml) honey or maple syrup, optional
60-120 ml (1/4-1/2 cup) water, as needed


Instructions

1. Prepare and freeze the watermelon

Cut the watermelon into cubes and spread them in a single layer on a parchment-lined baking sheet. Freeze for at least 4 hours or overnight until completely frozen.

2. Add ingredients to the blender

Add the lemon or lime juice to the blender first. Then add the fresh mint leaves, frozen berries, frozen watermelon cubes, and honey or maple syrup (if using).

3. Blend

Blend on low speed, then increase to high speed until the mixture becomes thick and slushy. Add ¼ – ½ cup water gradually if needed to help the mixture blend.

4. Serve and enjoy!

Pour the slushie into glasses and garnish with extra mint leaves if desired. Serve immediately.

Chef’s Tip: If the slushie becomes too liquid, add a few extra frozen watermelon cubes and blend again.

Notes

Storage Instructions

Fridge: Best served immediately. If stored in the fridge, it will melt and become more like a juice.

Freezer: Freeze leftovers in an airtight container for up to 1 month. Let it soften slightly, then re-blend before serving.
