Ingredients
2.5 kg (5.5 lbs) Potatoes suitable for roasting, peeled
4 tbsp Duck or Goose Fat (or Unsalted Butter), melted
1 - 2 tbsp Olive Oil
1 Bulb of Garlic
Salt and Pepper, for seasoning
Instructions
Preheat the Oven

Preheat your oven to 180°C (350°F).
Prepare the Potatoes

Wash and peel the potatoes.

Depending on the size of the potatoes, cut them in half or quarters, ensuring they are all about the same size.
Parboil the Potatoes

Parboil the potatoes in salted water for 10 - 12 minutes.
Drain and Steam the Potatoes

Drain the potatoes in a colander.

Leave them to steam dry for 2 minutes to help the fat stick to the potatoes.
Coat the Potatoes in Duck Fat

Place melted duck or goose fat and 1 tablespoon of oil in a large bowl.

Add the potatoes and toss to coat them evenly.

Pack the potatoes (flat side down) on a large baking sheet lined with baking paper.

Generously season with salt and pepper.

Squash the garlic bulbs, lightly crush each unpeeled clove, toss in the remaining duck fat and add to the baking sheet.
Roast the Potatoes

Roast for 40 - 45 minutes until the potatoes are crisp and golden all over. Halfway through, remove the Baking sheet from the oven, turn the potatoes around, and gently squash each one with a masher.
Serve and Enjoy!

Storage Instructions
Fridge: Store in an airtight container to stay fresh in the fridge for 3-5 days. Bring leftover potatoes to room temperature before storing.
Freezer: Place on a baking sheet lined with parchment paper in a single layer. Freeze for a few hours, then transfer frozen potatoes to an airtight container. Roasted potatoes can be frozen for up to 3 months. Thaw in the fridge overnight or on the counter for 15-20 minutes.
Reheat - Different ways to reheat roast potatoes without drying them out, keeping them crispy and delicious.
Air Fryer: Preheat to 180°C (350°F). Spray cooking spray on the potatoes, place them in the air fryer basket, and cook for 10 minutes, shaking and redistributing every 2 minutes to ensure even cooking.
Oven: Preheat to 200°C (400°F). Place potatoes on a baking sheet and spray with cooking spray. Reheat for 10-15 minutes, turning halfway through.
Toaster Oven: Preheat to 200°C (400°F). Place potatoes on a baking sheet and spray with cooking spray. Reheat for 10 minutes, turning halfway through.
Stovetop: Heat a little olive oil or butter in a large frying pan over medium-high heat. Add the potatoes and cook for about 10 minutes, flipping them over to ensure even crispiness.
Microwave: Not recommended unless you prefer soggy potatoes.
