Description
This delicious mashed potato recipe made without butter, is perfect as a side dish. It can be served as an everyday comfort food. It is also perfect when served for celebratory special occasions. Using simple ingredients, this healthy and creamy side dish will impress everybody!
Ingredients
1 kg (2 pounds) Potatoes suitable for mashing, peeled and cut into chunks
4 - 6 Garlic Cloves, peeled
60ml (1/4 cup) Extra Virgin Olive Oil
Salt and Pepper for seasoning
Instructions
1. Add the potatoes and garlic to a large pot, cover with cold water and season with salt.
2. Bring to the boil, cook on medium heat until the potatoes are fork tender.
3. Drain the potatoes and allow them to steam dry in the colander for a few minutes.
4. Add the potatoes and olive oil back into the pot and mash the potatoes using a potato masher (or use a potato ricer if you have one and mix in the olive oil).
5. Season and serve.
