Description
This creamy herb dressing is a quick Mediterranean-style dressing made with Greek yogurt, fresh herbs, lemon, garlic, and olive oil. It’s tangy, fresh, and creamy, perfect for salads, grain bowls, roasted vegetables, grilled chicken, or as a dip.
Ingredients
1 clove garlic, minced
2 tbsp (30 ml) fresh Italian parsley, finely chopped
2 tbsp (30 m) fresh mint, finely chopped
1 tbsp (15 m) fresh dill, finely chopped
Zest and juice of 1 lemon
3/4 cup (180 ml) Greek yogurt
2 tsp (10 ml) extra virgin olive oil
Salt and freshly ground black pepper, to taste
Instructions
1. Prep your ingredients
Mince the garlic and finely chop all the herbs.
2. Mix the base
In a bowl, combine the Greek yogurt, lemon zest, lemon juice, and olive oil. Stir in the garlic, parsley, mint, and dill.
Chef’s Tip: Let the dressing sit for 5–10 minutes before serving. This gives the garlic and herbs time to soften and blend into the yogurt.
3. Season and adjust
Season with salt and black pepper to taste. Adjust lemon or olive oil if needed.
4. Serve or store
Use immediately or refrigerate until needed.
