Chocolate Self Saucing Pudding with Poached Pears

Description

Chocolate Self Saucing Pudding is the kind of warm, cozy dessert that feels right at home during the holidays or on a chilly evening. This simple pudding creates its own rich chocolate sauce as it bakes — and pairing it with tender poached pears makes it extra special. Made from pantry staples and no mixer required.


Ingredients

For the pudding:

220 g (1 cup) caster sugar, divided

50 g (1/2 cup) unsweetened cocoa powder, divided (plus extra for dusting)

150 g (1 cup) self-raising flour

60 g (1/4 cup) unsalted butter, melted and cooled

125 ml (1/2 cup) milk

1/2 tsp vanilla extract

1 large egg
4-6 poached pears (see our How to Poach Pears recipe)

250ml (1 cup) boiling water


Instructions

1. Preheat the oven
Heat your oven to 180°C (350°F). Lightly butter a 30 x 20cm (13’’ x 9’’) baking dish.

2. Mix the dry ingredients

In a small bowl combine ½ cup (110 g) caster sugar, and ¼ cup (25 g) cocoa powder, set aside. In a large bowl, sift together the self-raising flour and ¼ cup (25 g) cocoa powder. Mix in the remaining ½ cup (110 g) caster sugar.

3. Combine the wet ingredients
In a separate bowl, whisk together the melted butter, milk, vanilla extract, and egg until combined.

4. Make the batter
Pour the wet mixture into the dry ingredients and mix until just combined (do not overmix). The batter should be thick.

5. Make the pudding base

Spread the batter evenly into the prepared baking dish. Sprinkle the sugar and cocoa mixture evenly over the top of the pudding.

6. Add the pears and sauce

Nestle the poached pears into the batter, spacing them evenly. Carefully pour 250 ml (1 cup) boiling water over the pudding, using the back of a spoon to avoid disturbing the surface.

Chef’s Tip: Don’t worry if the pudding looks unusual before baking. The liquid will sink down during cooking and transform into a rich, fudgy chocolate sauce beneath the cake. That’s the “self-saucing” magic!

7. Bake
Bake in the preheated oven for 35–40 minutes, until the top is set and springy. A rich chocolate sauce will form underneath the pudding.

8. Serve
Dust lightly with cocoa powder and serve warm with vanilla ice cream, extra chocolate sauce, and toasted almonds.

Notes

Fridge: Store covered for up to 3 days.
Not freezer friendly.
How to Reheat: Warm in the oven for 10–15 minutes or microwave individual portions for 20–30 seconds.
