Description

Strawberry compote recipe made with fresh strawberries, lemon juice, and honey for a simple homemade fruit topping. This easy strawberry compote cooks in about 20 minutes and is perfect for pancakes, yogurt, cheesecake, or ice cream. Sweet, slightly tangy, and full of fresh berry flavor, it’s one of the easiest ways to use seasonal strawberries.


Ingredients

500 g (1 lb) fresh strawberries, washed and quartered (or use frozen strawberries)

60 ml (1/4 cup) lemon juice
60 ml (1/4 cup) honey or maple syrup

1 teaspoon vanilla extract (optional)


Instructions

1. Prep the Strawberries
Wash, hull, and cut the strawberries into quarters. If using frozen strawberries, there’s no need to thaw first.

2. Cook the Compote
Add the strawberries, lemon juice, honey (or maple syrup), and vanilla (if using) to a medium saucepan. Stir gently to combine.

3. Simmer Until Syrupy
Bring to a gentle simmer over medium heat. Cook for 15–20 minutes, stirring occasionally, until the fruit softens and releases juices. The compote should thicken slightly.

4. Cool and Store
Remove from the heat and let cool. Transfer to a clean glass jar or airtight container.

5. Serve and Enjoy
Spoon warm or chilled over pancakes, yogurt, parfaits, or desserts.
