Moroccan Style Orange Salad with Dates and Pomegranates

Description

Embrace the vibrant flavors of Morocco with this delightful Moroccan-style orange Salad with Dates and Pomegranates. Packed with vitamin C, this healthy dish is a burst of color in the winter months. Learn how to make it in minutes!


Ingredients

For the Salad:

4 - 5 oranges, peeled and sliced (we love using a mix of what we have on hand, cara cara, navel oranges, and blood oranges just a few suggestions)

1/2 small red onion, thinly sliced

4 medjool dates, thinly sliced

1 cup baby arugula, washed

1/2 cup Pomegranate seeds

3 tbsp flaked or chopped whole almonds, toasted

Fresh mint leaves, to garnish

For Citrus Vinaigrette:

4 tbsp (60ml) extra olive oil

2 tbsp (30ml) red wine vinegar

2 tbsp (30ml) fresh blood orange juice

1 tbsp orange zest

1 tsp (5ml) wholegrain Dijon mustard

1 tbsp (15ml) honey

1 garlic clove, minced

1/2 tsp (2.5ml) whole cumin seeds, toasted and crushed (or ground cumin)

1/4 tsp (2ml) ground cinnamon

Pinch of paprika

Salt and ground black pepper, to taste


Instructions

1. Make the salad - Prep all salad ingredients. Assemble the salad on a serving platter or in a salad bowl.

2. Make the Citrus Vinaigrette - Whisk together all the dressing ingredients in a small bowl. Alternatively, add all the dressing ingredients to a jar, seal, and shake until well combined. Season with salt and pepper. Taste and add more honey or a squeeze of lemon juice if needed. Serve with salad.

 

Notes

Storage Instructions:

Make ahead - To make this winter salad ahead of time, prep the ingredients and make the dressing, storing them in separate airtight containers. When ready to serve, assemble the salad and toss with the dressing.

Storing leftovers in the Fridge - This salad is best eaten fresh. If you have leftovers, store them without the dressing for up to 1-2 days in an airtight container in the refrigerator.
