Description

This marinated feta cheese is a quick Mediterranean appetizer made with creamy feta, olive oil, garlic, and fresh herbs. Easy to prepare and perfect for mezze platters, salads, or entertaining.

Ingredients

250 g (8 oz) fresh feta cheese, cut into bite-sized cubes

125- 180 ml (1/2 - 3/4 cup) extra virgin olive oil

1 small garlic clove, finely grated or minced

Large pinch crushed red pepper flakes (optional)

Zest of 1/2 lemon (optional)

1-2 tablespoons fresh herbs, finely chopped (parsley, basil, mint, oregano, thyme or dill)

Freshly ground black pepper, to taste

Instructions

1. Prepare the feta

Cut the feta into even cubes (about 1.5–2 cm / ½–¾ inch). Gently pat dry if very moist.

2. Make the marinade

In a small bowl, combine the olive oil, garlic, crushed red pepper flakes (if using), lemon zest (if using), chopped herbs and black pepper. Stir well.

3. Marinate

Place the feta in a shallow dish or airtight glass jar container. Pour the marinade over and gently toss to coat.

Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

4. Serve and Enjoy

Bring to room temperature for 20–30 minutes before serving.
Serve with crusty bread, add to salads, or use for appetizer skewers.

Chef’s Tip: Feta stored in brine is usually creamier and holds its shape best.
