This almond biscotti recipe is a classic Italian twice-baked cookie that’s crisp, nutty, and perfect for dipping into coffee or dessert wine. Ingredients
400 g (3 cups) plain all purpose flour, sifted, plus extra for dusting
200 g (1 cup) caster sugar
12 g (2 tsp) baking powder
2 tsp honey
4 medium eggs
Zest of 1 orange
Pinch of salt
1 tsp vanilla extract
200 g (1 1/2 cups) whole almonds (1/2 chopped, 1/2 left whole)
Instructions
Preheat the oven:
Preheat the oven to 180°C (350°F). Line 2 baking sheets with parchment paper.
Make the dough:
Add flour, sugar, baking powder, honey, eggs, orange zest, salt, and vanilla extract to the bowl of a food processor. Pulse until the mixture comes together into a smooth dough.
Add almonds:
Transfer the dough to a floured surface. Knead in the almonds until evenly distributed.
Chef’s Tip: This dough can be sticky. If needed, sift a little extra flour over the top and gently work it in. Avoid adding too much or over-kneading.
Shape loaves:
Divide the dough into two equal portions. Shape each into a log about 25 cm (10 in) long and 5 cm (2 in) wide. Place on the prepared baking sheets.
First bake:
Bake for 20–25 minutes, or until lightly golden and firm. Remove from the oven and reduce the oven temperature to 160°C (320°F).
Cool and slice:
Let the loaves cool for 15 minutes. Using a serrated knife, slice diagonally into 1 - 1 ½ cm (½ in) slices.
Second bake: Lay the slices cut-side down on the baking sheets. Bake for another 10–15 minutes until crisp and golden. Flip halfway through for even baking.
Cool completely:
Transfer to a wire rack to cool. Store in an airtight container for up to 2 weeks.
