Description

This Tagine Spice Mix is the secret to Moroccan magic—an aromatic, all-purpose blend of warm spices like cinnamon, cumin, and ginger. It brings depth and complexity to tagines, couscous, and rice dishes. This homemade version is easy to make and far more fragrant than store-bought.


Ingredients

Ground Spices

1/2 tsp ground cloves

1/2 tsp ground cayenne pepper

2 tsp ground allspice

2 tsp ground cumin

2 tsp ground ginger

2 tsp ground turmeric

2 tsp ground black pepper

2 tsp ground cardamom

3 tsp ground cinnamon

3 tsp ground coriander

1 whole nutmegs, freshly grated (approx. 1 tsp)

Whole Spices - toasted and ground

Whole Spices:

2 tsp whole cloves

2 tbsp whole allspice berries

2 tbsp whole cumin seeds

2 tbsp whole black peppercorns

2 tbsp whole cardamom pods

1-2 cinnamon sticks, broken in pieces

3 tbsp whole coriander seeds

Ground Spices:

1 tsp ground cayenne pepper

4 tsp ground ginger

4 tsp ground turmeric
2 tsp freshly grated nutmeg (from about 2 whole nutmegs)


Instructions

Method 1: Quick Ground Spice Blend

  1. Measure and mix
    Add all the ground spices (including freshly grated nutmeg) to a medium bowl.

  2. Combine well
    Stir until evenly mixed. Store in an airtight jar in a cool, dry place for up to 6 months.

Method 2: Toasted Whole Spice Blend

  1. Toast the whole spices
    Place the cloves, allspice, cumin, black peppercorns, cardamom, cinnamon, and coriander in a dry skillet over medium heat. Toast for 2–3 minutes, stirring frequently, until fragrant.

  2. Cool and grind
    Let the spices cool completely, then grind to a fine powder using a spice grinder or mortar and pestle.

  3. Mix with ground spices
    Stir in the ground cayenne, ginger, turmeric, and freshly grated nutmeg.

  4. Store
    Transfer to a clean spice jar or airtight container. Keep in a cool, dry cupboard for up to 6 months.
