Description

These Greek Salad Skewers are a fresh and easy Greek appetizer made with cherry tomatoes, cucumber, green bell pepper, kalamata olives, red onion, and creamy feta cheese. Drizzled with homemade Greek salad dressing, they’re colorful, refreshing, and perfect for summer parties, BBQs, mezze platters, and picnic boards.


Ingredients

1/4 small red onion, cut into petals

1 - 2 tbsp red wine vinegar

12 - 24 cherry tomatoes

1/2 English cucumber (about 180 g / 6 oz), cut into 2-3 cm (1 inch) chunks
or 1 small Persian cucumbers
1/2 green bell pepper, cut into bite-sized pieces
100 g (4 oz) feta cheese, cut into 12 cubes
12 kalamata olives, pitted
Dried oregano, for sprinkling
12 small bamboo skewers or cocktail sticks

For serving

1 - 2 tbsp Homemade Greek Salad Dressing or extra virgin olive oil


Instructions

1. Prepare the red onion

Place the red onion in a small bowl and add a splash of red wine vinegar. Toss and let sit for 5–10 minutes to soften.

Chef’s Tip: This quick pickling step removes the sharp bite from the onion so it complements the other ingredients rather than overpowering them.

2. Prepare the ingredients

Cut the cucumber, bell pepper, and feta into evenly sized bite-sized pieces so they stack neatly on the skewers.

3. Assemble the skewers

Thread the ingredients onto each skewer in the following order:

Cherry tomato → olive → folded red onion → bell pepper → cucumber → feta

Repeat until all skewers are assembled.

Chef’s Tip: Place the feta at the end of the skewer so it stays intact and doesn’t crumble while assembling or serving.

4. Arrange and garnish

Place the skewers on a serving platter. Sprinkle lightly with oregano.

5. Serve

Drizzle lightly with homemade Greek salad dressing or good quality extra virgin olive oil just before serving, or serve the dressing on the side for dipping.

Serve immediately.

Chef’s Tip: For the best presentation, drizzle the dressing just before serving to keep the skewers fresh and vibrant.

Notes

Storage Instructions 

Fridge: These skewers are best served fresh, but they can be stored in an airtight container in the refrigerator for up to 1 day. For the best texture, add the oregano and dressing just before serving.

Make Ahead: Assemble the skewers a few hours ahead and store them covered in the fridge. Serve with Greek salad dressing on the side or drizzle lightly just before serving.
