Easy Stovetop Carrots with Honey and Thyme Glaze

Ingredients

500g (1lb) Small Fresh Carrots (or rainbow carrots if available), peeled

1 - 2 tbsp Unsalted Butter

1 tbsp Olive Oil

3 Cloves of Garlic, bashed

4 - 5 Sprig of Fresh Thyme, leaves removed

1 Orange, zest and juice

1 tbsp Honey or Soft Brown Sugar


Instructions

1. Prep the Carrots - Wash and peel the carrots. Depending how big the carrots are, use a sharp knife to cut them in half or quarters lengthwise. If you are using ‘baby’ or very young carrots, you can leave them whole.

2. Cook the Carrots - Melt butter and olive oil in a large frying pan over medium heat. Add the whole bashed cloves of garlic to the pan, turning after 1 minute. Add thyme leaves, orange juice, honey (or brown sugar), and a splash of water. Add carrots in a single layer, season with salt and black pepper, and toss to coat. Cover, reduce heat to medium-low, and cook for 15 to 20 minutes, until tender. Remove the lid and cook for another 5 minutes, until the glaze has reduced and the carrots are sticky and caramelized.

3. Serve and Enjoy!

Storage Instructions

Fridge: Store any leftover carrots in an airtight container in the fridge for up to 3-4 days.

Reheat: Reheat the carrots gently on the stove top over medium heat or in the microwave until warmed through.

Make Ahead: Glazed carrots are best fresh. You can prepare the carrots a day in advance and store them in the fridge. Reheat before serving to save time on busy days.
