Description

This easy orzo recipe is your go-to side dish when you need something creamy, flavorful, and quick. With garlic, Parmesan, and fresh herbs, it comes together in just 20 minutes and pairs beautifully with everything from roasted chicken to grilled fish.

Ingredients

1 cup (200g) orzo pasta

4 cups water or chicken or vegetable stock (you can also use broth, just adjust the salt)

Salt, for the pasta water

1 tbsp olive oil

1 small yellow onion, finely chopped

2 garlic cloves, minced

1/2 cup (50g) freshly grated Parmesan cheese

2 tbsp chopped fresh herbs (such as parsley, basil, or chives)

Freshly ground black pepper, to taste

Optional: drizzle of olive oil or butter, a squeeze of lemon and extra Parmesan for serving

Instructions

  1. Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions (usually 8–10 minutes) until al dente. Drain and set aside.

  2. Meanwhile, heat olive oil in a medium skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened.

  3. Add the garlic and cook for 30 seconds until fragrant.

  4. Toss in the cooked orzo and stir to combine. Remove from heat.

  5. Stir in the Parmesan and herbs, mixing until everything is well coated. Add a splash of olive oil or a spoonful of the reserved pasta water if needed to loosen it up.

  6. Season to taste with black pepper and a little extra salt if needed.

  7. Serve warm, topped with more Parmesan, a squeeze of lemon and a drizzle of good olive oil.

Notes

Fridge: Store in an airtight container for up to 3 days.

Make Ahead: Cook the orzo and prep the aromatics ahead; toss everything together before serving.

How to Reheat: Gently reheat in a skillet with a splash of broth or water, or microwave in 30-second bursts, stirring in between, until heated through.

Ways to Use Leftovers: Turn into a pasta salad, stir into soups, or stuff into bell peppers.

Not Freezer-Friendly: The texture may become mushy after freezing.
