Easy Chicken and Spiced Plum Casserole Recipe

Description

This Chicken and Spiced Plum Casserole is the ultimate weeknight dinner, blending the rich flavors of seasonal plums with tender chicken. A family favorite that promises a delicious, easy-to-make meal perfect for any occasion.


Ingredients

For The Marinade

100ml Red Wine

3 tbsp Honey

1 tsp Whole Grain Mustard

3 - 4 Whole Star Anise

1 Cinnamon Stick

For The Chicken

4 Free Range Chicken Thighs, bone in and skin left on

4 Free Range Chicken Drumsticks (or 8 chicken thighs)

2 Red Onions, cut into 4-6 wedges

6 - 8 Whole Garlic Cloves, peeled

3 - 4 Bay Leaves

Small handful of Fresh Thyme (more or less 10g)

For The Casserole

8 - 10 Ripe Plums, cut in half and destoned

125ml Chicken Stock

1 tbsp Extra-Virgin Olive Oil

Salt and Freshly Ground Pepper

Small handful of Fresh Italian Parsley, chopped


Instructions

1. Make the Marinade - Mix together the red wine, honey, mustard, and spices.

2. Marinate the Chicken - Place the chicken pieces, onion, garlic and herbs in a large bowl. Pour the red wine marinade over the chicken. Toss to combine, cover and marinate in the fridge for 30 - 60 minutes or overnight.

3. Prepare the oven - Preheat the oven to 200°C (392°F).

4. Prepare the Casserole - Place the plums, chicken stock and a few sprigs of thyme in a large casserole dish. Add the marinated chicken mixture on top of the plums. (Ensure the chicken pieces are skin side up) Drizzle the olive oil over the chicken pieces and generously season with salt and pepper.

5. Bake - Bake the chicken casserole uncovered in the preheated oven for 40 - 45 minutes or until the chicken is golden brown and cooked through and the plums are soft and jammy.

6. Rest - Remove the casserole from the oven, discard the star anise, cinnamon stick and bay leaves. Allow the casserole to settle and the chicken pieces to rest for 5 minutes. 

7. Garnish - Scatter with chopped parsley and serve with your favorite sides

 

Notes

Food Safety - minimum recommended internal temperature for cooked chicken is 73°C (165°F)

Storage Instructions - Store leftovers in an airtight container in the refrigerator for 2-3 days to maintain freshness.

How To Reheat This Casserole: In the Oven (Best Option) - Place the leftovers in an oven-proof dish, cover with foil, and reheat at 180°C (356°F) for 20-30 minutes or until warmed through. This method helps retain moisture and keeps the flavors intact. In the Microwave - While quick and convenient, reheating in the microwave may not preserve the chicken skin crispiness. If opting for this method, cover the dish and heat in short intervals, stirring occasionally to ensure even warming.
