This is the best tomato bruschetta recipe. It is a fresh and flavorful Italian appetizer made with ripe tomatoes, basil, garlic, olive oil, and crispy toasted bread. It’s simple to make, packed with Mediterranean flavor, and perfect for summer entertaining, antipasto platters, or easy appetizers with wine.
Ingredients
For the Bruschetta toast
1 day old baguette, ciabatta or crusty sourdough (250-300 g / 8-10 oz)
3 - 4 tbsp (45 - 60 ml) extra virgin olive oil
1/4 tsp Italian seasoning (optional)
1 garlic clove, cut in half (optional)
Flaky sea salt (optional)
For the Tomato Basil Topping
450 g (1 lb) ripe tomatoes, deseeded diced
2 tbsp (30ml) extra virgin olive oil
1 tbsp (15ml) balsamic vinegar
1 garlic cloves, minced,
Small handful fresh basil, sliced into fine ribbons
Salt and freshly ground black pepper
Instructions
Preheat the oven to 200°C (400°F).
In a bowl, combine tomatoes, minced garlic, 1-2 tbsp of olive oil, balsamic vinegar and basil. Season with salt and pepper.
Let it sit at room temperature for 15 minutes to marinate and develop flavor.
In a small bowl, stir the olive oil and Italian seasoning (if using) together.
Chef’s Tip: You can also use a mix of chopped fresh herbs like parsley, thyme, or oregano for variation.
Slice bread into 1–1.5 cm (½ inch) thick slices and arrange on a baking tray. Lightly brush both sides with olive oil.
Bake for 8–12 minutes, flipping halfway, until golden and crisp.
While the toast is still warm, rub the cut side of the garlic over both sides of the toast. Sprinkle lightly with salt.
Spoon the tomato mixture over the toasted bread just before serving.
Serve immediately.

Storage Instructions
Fridge: Store the tomato topping separately in an airtight container in the refrigerator for 1–2 days. The toasted bread is best served fresh.
Make Ahead: Prepare the tomato topping a few hours ahead and store separately. Bread can be toasted 1 day in advance and ‘re-crisped’ in the oven if necessary. Assemble just before serving
