Description

Indulge in this scrumptious and foolproof banana bread recipe, made effortlessly with self-rising flour. No special equipment required, just a dash of enthusiasm and a few simple ingredients for a delectable treat.


Ingredients

2 cups self-rising flour, sifted (300g)

1/2 tsp baking powder

1 cup of light brown sugar or dark brown sugar (220g)

2 large eggs at room temperature, lightly whisked

1 tsp vanilla extract

1/2 cup Sunflower oil (125ml)

1/2 cup plain yogurt (125 ml)

2 large (or 3 medium) overripe bananas, mashed


Instructions

Prep - Preheat the oven to 180°C (350°F). Grease and line a 9 x 4 inch (10cm x 24cm) loaf pan. Weigh out all ingredients. Mash bananas.

Make the Batter - Combine the dry ingredients (flour, baking powder, and sugar) in a mixing bowl. Whisk the egg, vanilla extract, oil, yogurt, and mashed bananas in a large bowl. Add the wet ingredients to the flour mixture and gently fold in until just combined. If you're adding any extras, fold them in gently.

Bake - Spoon the batter into the prepared pan and smooth the surface.

Bake for 50 - 60 mins or until a long skewer inserted in the center comes out clean.

Cool - Let it cool in the pan for 10 minutes before transferring to a wire rack. Slice and serve warm or at room temperature.

 

Notes

Chef’s Tip: Don’t overmix the batter! Overmixing can result in a dense loaf.

Chef’s Tip: Baking times may vary, so start testing after 45 minutes. Add extra time if needed. If the loaf is browning too quickly, tent it with aluminum foil.

Storage Instructions - Room Temperature: Wrap in cling wrap or store in an airtight container for 2-3 days. Freezing: Wrap the cooled loaf in foil or parchment paper. Place in a labeled plastic bag and freeze for up to 3 months.
